Here's another recipe that I got from Kitchen Kneads. It's a fast and easy pancake recipe. We really enjoy them.
Blender Pancakes
1 1/4 cups water
1 cup of whole grain kernels
1/4 cup powdered milk
1 egg
2 Tbsp oil
1 Tbsp honey or sugar
1/4 tsp salt
1 Tbsp baking powder
In a blender mix water, grain kernels, dry milk, egg, oil, honey, and salt. Blend 3 minutes. Add baking powder and blend just until mixed. Mixture will foam up and get very light. Cook immediately on a hot griddle.
When I made them this morning, I added a couple teaspoons of whole flax seeds. I didn't grind them first because I knew they would grind in the blender. I also put blueberries on the pancakes once I put them in the pan so we had blueberry pancakes. I used applesauce instead of oil and I used a breakfast blend (a mixture of buckwheat, barley, rice, millet, and oats) for the grains.

Block By Block
This week I went to Pleasant Grove with my Dad and my Grandparents. We went to the house (Houses actually. I guess it would be called a triplex.) where my Great Grandpa lived. My Grandparents still own the house and land. It was a fascinating thing to me.I had been to the house before to visit my Great Grandpa and to help my Grandparents clean it after he passed away, but I hadn't paid much attention to it. I saw it differently when my Grandpa told me that he and his Dad made the cinder blocks to build the house. My Great Grandpa built his house block by block. He and my Grandpa made every single one of them. The machine they used to make the blocks sits in a huge shop filled with tools. As I walked through the shop I could see where my Grandpa got his talent for welding and woodworking. I could also see where my Mom got her talent for taking something that other people would have thrown away and making it into something beautiful.

The Other Side Of The Mountain
This afternoon Dwight and I decided to take a drive. The weather was overcast with a chance of rain, but we decided to go anyway. I packed a picnic lunch and we headed to the Alpine Loop. The loop goes behind Mt. Timpanogos, the mountain I like to admire from our deck. On our side of the mountain there are very little trees and a lot of gravel. It's completely different on the other side. I felt like we were in Washington and not Utah while we were driving. It was green and tree-filled and even raining. In fact, it rained quite hard. We had to drive through hail and downpours for about 20 minutes. It was beautiful.
When I rolled down the window to get a picture, the rain came pouring in, drenching the dashboard in just a few seconds.

We stopped at one of the trailheads leading to Mt. Timpanogos and sat in the car to eat our lunch. It was so quiet and peaceful. Ellie enjoyed leaning out the window and sniffing the mountain air.
We followed the loop, on Hwy 92 until we came to Sundance. It had stopped raining by the time we arrived so we stopped and walked around for a little while. I would have taken some pictures, but unfortunately the camera battery died. A small group of people were filming a movie in the parking lot, but we didn't see any big stars.
It's amazing how something can be so different on one side than the other.

From The Garden

This week I was able to harvest some of the salad mix I planted in the garden. It was so nice to just step out in the backyard and clip some lettuce when I wanted to make a salad for dinner. Having a garden is wonderful.
This year we planted tomatoes, peas, beets, kale, onions, spinach, salad mix, zucchini, butternut squash, acorn squash, cucumbers, lemon cucumbers, 4 different kinds of peppers and a variety of herbs. We still have the strawberries I got from my parent's yard two years ago. So far, things look promising. I noticed a little pea pod tonight as well as a strawberry that's almost ripe.
